Shrimp Fry Enchiladas
1 8 oz Package SeaPak® Shrimp Fries
1 package small flour tortillas
1 8 oz bag of shredded Mexican cheese
1 8 oz bag of shredded cheddar cheese
1 can black beans, drained and rinsed
2 10 ounce cans of enchilada sauce
Cook SeaPak Shrimp Fries according to package directions and keep warm.
Preheat oven to 350°F.
Pour about 1/2 cup of enchilada sauce into the bottom of a 9''x13'' casserole dish.
Place some shrimp fries and beans onto the tortilla and top with generous amounts of cheese. Roll tortilla and place seam side down into the casserole dish. Repeat with remaining tortillas.
Pour remaining sauce over the tortillas and top with a generous sprinkling of cheeses.
Bake at 350°F for 20-25 minutes, until top is bubbly.
Serve immediately with your favorite garnishes.
