Ingredients

  • 2 (5-ounce) packages SeaPak Cajun Shrimp
  • 2 tablespoons butter
  • 8 ounces mild Italian sausage, casings removed
  • 2 stalks celery, diced
  • 1 jalapeño pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups reduced-sodium chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 cup basmati rice
  • 2 tablespoons finely chopped fresh parsley

Directions

  1. In medium saucepan set over medium heat, melt butter. Cook sausage meat, celery, jalapeño, onion and garlic for 5 to 8 minutes or until sausage starts to brown and veggies start to soften.
  2. Stir in broth and Cajun seasoning; bring to a boil. Stir in rice. Reduce heat to low. Cover and cook for 18 to 20 minutes or until rice is tender and has absorbed most of the liquid. Turn off heat. Let stand, covered, for 10 minutes.
  3. Meanwhile, heat large skillet over medium-high heat. Arrange SeaPak Cajun Shrimp in skillet in even layer. Cook, turning halfway during the cook time, for 7 to 8 minutes or until shrimp are heated through. (Alternatively, cook shrimp in oven or microwave according to package directions.)
  4. Divide dirty rice among 4 bowls. Top evenly with shrimp and garnish with parsley.

Tip: Substitute mild Italian sausage with breakfast sausages or honey garlic sausages if preferred.
