Cajun Shrimp and Sweet Potato Hash

With sweet potatoes, black beans and corn, this one-pan shrimp hash is a feast of tasty flavors that’s both healthful and hearty.

- 2 (5-ounce) packages SeaPak Cajun Shrimp
- 2 tablespoons butter
- 1 1/2 pounds sweet potatoes, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1 (14-ounce) can black beans, drained and rinsed
- 1 cup frozen corn
- 2 tablespoons finely chopped fresh chives
Directions
- In large nonstick skillet set over medium heat, heat butter until melted. Cook sweet potatoes for 8 to 10 minutes or until starting to brown.
- Add onion and garlic. Cook for 3 to 5 minutes or until onion is starting to soften. Stir in tomato paste and Worcestershire sauce and cook for 1 to 2 minutes.
- Stir in black beans and corn. Reduce heat to medium. Top with SeaPak Cajun Shrimp. Cover and cook, turning shrimp halfway through the cook time, for 10 to 12 minutes or until shrimp are heated through and sweet potatoes are tender.
- Garnish with chives before serving.
Tips: Substitute black beans with pinto beans or kidney beans if preferred.
This hash also makes a tasty brunch dish. Serve topped with fried or poached eggs.
