1 package of SeaPak Coconut Cod
1 bag of microwavable cilantro-lime rice
1 cucumber, diced
1 avocado, chopped
1 can of tropical fruit salsa, or salsa of choice
Cook the Coconut Cod according to package directions. While the cod is cooking, microwave the cilantro-lime rice and chop cucumber, avocado and fresh cilantro. Scoop rice into bowl, then arrange Coconut Cod, diced cucumber, and avocado on top. Finish with a dollop of jarred tropical fruit salsa and fresh cilantro.
