1 9oz package of SeaPak Jumbo Butterfly Shrimp
1 cup prepared pico de gallo
½ cup sour cream
1 package (10oz) mixed bag salad greens (or 1 head of lettuce, chopped)
1 cup shredded cheddar cheese
Tortilla strips for garnish
Prepare shrimp according to package instructions and keep warm.
While the shrimp is baking, peel, pit and slice the avocados.
In a large mixing bowl, stir together the sour cream and pico de gallo. Add salad greens and toss to coat.
TO SERVE: Divide the salad between 4 serving bowls. Top each with shrimp, cheese, sliced avocados and salt and pepper to taste. Garnish with tortilla strips.
