Salmon and Orzo Salad Recipe

Recipe Description

A bright salmon and orzo salad with flaked salmon, tender orzo, fresh green onions, feta, and a lemon‑dill vinaigrette for a light, satisfying meal.

Ingredients

  • 1 package SeaPak® Salmon Burgers (four patties)
  • 1/4 cup olive oil
  • Juice and zest of 2 lemons
  • 1 tsp honey
  • 1 tbsp minced fresh dill
  • 1 pound orzo pasta, cooked al dente and cooled
  • 2 green onions, chopped (green parts only)
  • 1/2 cup crumbled feta cheese
  • Kosher salt
  • Freshly ground black pepper

Directions

Cook salmon burgers according to package directions.

Allow to cool.

Once cooled, flake into a bowl and set aside.

In a large mixing bowl whisk together the olive oil, lemon juice and zest, honey and fresh dill.

Salt and pepper to taste.

Stir in cooked and cooled orzo, green onions and feta.

Gently fold in the flaked salmon and serve.
