Shrimp and Veggie Griller Fajitas



Ingredients
- 1 12 oz package SeaPak® Shrimp Scampi
- 1 yellow bell pepper, seeds removed and then cut into strips
- 1 red bell pepper, seeds removed and then cut into strips
- 1 green bell pepper, seeds removed and then cut into strips
- 1 red onion, cut into strips
- 2 Tbsp Chili Powder
- 2 Tbsp Cumin
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 avocado, sliced
- 1 lime, quartered
- 4 corn tortillas
- ½ cup prepared pico de gallo or salsa
Directions
Prepare scampi according to package directions and keep warm.
Heat oil in skillet and sauté peppers, onion, and garlic for 5-7 minutes.
Mix spices together in a bowl.
Toss cooked shrimp, sautéed vegetables and spices together in a bowl. Scoop mixture into 4 individual foil packets.
Place foil packets on the grill and cook for 10-15 minutes.
Place tortillas on grill and heat until just charred around the edges. Remove to plate.
TO SERVE:
Serve with corn tortillas, avocado, lime and pico de gallo or salsa on the side.
