Ingredients

  • 1 12 oz package SeaPak® Shrimp Scampi
  • 1 yellow bell pepper, seeds removed and then cut into strips
  • 1 red bell pepper, seeds removed and then cut into strips
  • 1 green bell pepper, seeds removed and then cut into strips
  • 1 red onion, cut into strips
  • 2 Tbsp Chili Powder
  • 2 Tbsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 avocado, sliced
  • 1 lime, quartered
  • 4 corn tortillas
  • ½ cup prepared pico de gallo or salsa

Directions

Prepare scampi according to package directions and keep warm.

Heat oil in skillet and sauté peppers, onion, and garlic for 5-7 minutes.

Mix spices together in a bowl.

Toss cooked shrimp, sautéed vegetables and spices together in a bowl. Scoop mixture into 4 individual foil packets.

Place foil packets on the grill and cook for 10-15 minutes.

Place tortillas on grill and heat until just charred around the edges. Remove to plate.

TO SERVE:

Serve with corn tortillas, avocado, lime and pico de gallo or salsa on the side.
