Ingredients

  • 1 20 oz package SeaPak® Popcorn Shrimp
  • 1 bag romaine lettuce salad or 1 head of Romaine lettuce, chopped
  • 1/2 cup ranch dressing (use more or less to taste)
  • 1 tbsp olive oil
  • 1 granny smith apple, peeled and diced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup walnuts, roughly chopped
  • 2 oz white cheddar cheese, cubed

Directions

Preheat oven to 450°F.

Bake shrimp according to package instructions.

Place chopped lettuce into large mixing bowl.

Add ranch dressing and toss until fully coated. Portion lettuce onto serving dishes.

Place olive oil into a medium skillet on medium high heat. Add sliced onions and sauté until seared (about 4 minutes), stirring occasionally.

Add walnuts and continue sautéing for 1 more minute, then remove from heat.

Top lettuce with cooked onions, walnuts, diced cheese and shrimp. Serve immediately.
