BBQ Shrimp Stuffed Jalapeño Poppers

Ingredients
- 1 12 oz package SeaPak® Shrimp Scampi, frozen
- 1 cup shredded sharp cheddar cheese
- 6 extra-large jalapeño peppers
- 6 slices of thinly sliced bacon
Directions
Prepare shrimp according to package directions and allow to cool for 5 minutes.
When scampi is cooled, stir in cheese and set aside.
Heat an outdoor grill or indoor grill pan to medium high heat.
Cut a sliver off the side of each jalapeño.
Clean out the seeds and membranes using a paring knife or small spoon.
Stuff the jalapeños with the shrimp and cheese mixture.
Wrap the stuffed jalapeños with bacon and place on a hot grill or grill pan for 12 to 18 minutes (or until the bacon has cooked through), turning occasionally.
Serve immediately.
Note: Watch for fire flare ups as the fat begins to render off the bacon.
