Golden toasted quesadillas are packed with gooey cheese and crispy popcorn shrimp for a fun meal based on classic kid-friendly finger food. This versatile recipe can be built with grown-up variations and even healthier options.
Ingredients
- 1/2 (18-ounce) package SeaPak Popcorn Shrimp
- 1 cup shredded mild Cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1 cup finely chopped cauliflower or store-bought cauliflower rice, cooked and patted dry
- 2 tablespoons olive oil (approx.), divided
- 1/2 cup sour cream, for dipping
Directions
- Prepare SeaPak Popcorn Shrimp according to package directions.
- In medium bowl, toss together Cheddar and mozzarella. Sprinkle 1/4 cup cheese mixture over half of each tortilla. Top with cauliflower and popcorn shrimp to suit your child’s taste. Sprinkle another ¼ cup cheese mixture over each filling. Fold tortillas over to enclose filling.
- In large skillet set over medium heat, heat 1 tablespoon oil. In batches, cook quesadillas, flipping once, for 4 to 6 minutes or until golden brown and cheese has melted, adding more oil to skillet as needed.
- Cut each tortilla into 3 wedges. Serve with sour cream for dipping.
For Adult-Friendly Builds
- Variation: Layer extra shrimp into quesadillas.
- Additions: Add chopped fresh cilantro, sliced green onion, jalapeño slices and/or chopped canned chipotle peppers with adobo sauce to up the flavor. Or simply season with pinch smoked paprika, cumin or chili powder. Serve with lime wedges.
For Optional Healthy Builds
- Variation:Use whole wheat tortillas if your child accept this flavor.
- Vegetables: Layer in more cauliflower, or try sautéed sweet red, orange or yellow bell pepper to suit your child’s taste.
- Additions: Serve grilled cheese with avocado crema for dipping to expose your child to new and healthful flavors — simply combine 1/2 cup sour cream with 1 mashed avocado and pinch salt.
