Recipe Description
Baked shrimp, melty cheese and rich marinara come together in a kid-approved classic with grown-up appeal. You can easily adapt this with grown-up variations and even healthier options to suit your family’s tastes. Serve Parm Minis over pasta, tossed with more marinara sauce or butter if desired. If you have leftovers, serve in slider buns and toast for easy mini paninis.
Ingredients
- 1/2 (18-ounce) package SeaPak Classic Butterfly Shrimp
- 1 1/2 cups marinara sauce
- 1/2 cup finely grated carrot
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 12 ounces pasta (like farfalle, fusilli, or rotini)
Directions
- Prepare SeaPak Butterfly Shrimp according to package directions. Meanwhile, cook pasta according to package directions.
- Preheat broiler.
- In medium saucepan, stir together marinara sauce and carrot; bring to a boil over high heat. Reduce heat to medium-low and cook for 5 minutes or until carrot has softened.
- Arrange butterfly shrimp on foil-lined baking sheet. Top each with marinara sauce, mozzarella and Parmesan. Broil for 2 minutes or until cheese is bubbling.
- Combine as much pasta and Parm Minis to suit your child’s taste and serve.
For Adult-Friendly Builds
- Additions: Top with a little basil pesto, chopped oil-packed sun-dried tomatoes or sliced olives, or simply drizzle with a little olive oil. Garnish with torn fresh basil or chili flakes. Serve dish with a simple arugula salad tossed with olive oil and balsamic vinegar.

- Substitutions: Serve Parm Minis with whole-grain pasta or zucchini noodles.
- Vegetables: Gradually incorporate more veggies into the sauce by adding more carrot, another veggie or a combination of veggies, suited to your child’s taste — finely chopped butternut squash, sweet potato, zucchini, red bell pepper, celery and spinach are all good options. Cook sauce until veggies are tender; to hide veggies in sauce, purée in blender until smooth.
