Ingredients
- 1 (12-ounce) package SeaPak Shrimp Scampi
- 1 cup long-grain white rice
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1 cup frozen peas
Directions
- In small saucepan, bring 2 cups water to a boil. Stir in rice, butter and salt. Cover and cook for 10 minutes. Add peas. Cover and cook for 5 more minutes or until rice is tender and has absorbed most of the liquid. Remove from heat and let stand for 5 minutes. Fluff with fork.
- Meanwhile, prepare SeaPak Shrimp Scampi according to package directions.
- Combine as much rice and shrimp scampi to suit your child’s taste and serve.
For Adult-Friendly Builds
- Variations: Top rice with more shrimp and scampi sauce.
- Additions: Garnish with 2 tablespoons lemon zest and finely chopped fresh parsley, and season with chili flakes or freshly ground black pepper.
For Optional Healthy Builds
- Substitutions: Substitute white rice with brown rice if your family will accept the substitution, or substitute some of the rice with quinoa to incorporate more fiber into the dish.
- Vegetables: Gradually add more veggies into the rice as your child becomes more comfortable with the flavors of this dish; try diced carrot, corn, chopped green beans and/or chopped baby spinach. For easy adult additions, baby arugula or kale can be stirred into rice before serving.
