Recipe Description

Creamy guacamole flatters the spicy shrimp in these sweet potato bites, a crowd-pleasing appetizer that you’ll love to make for any gathering.

  1. Preheat oven to 425°F.
  2. In large bowl, toss sweet potatoes with oil, chili powder, cumin, salt and pepper. Arrange in single layer on large parchment paper–lined baking sheet.
  3. Bake for 15 to 20 minutes or until tender. Let cool completely.
  4. Meanwhile, cook SeaPak Dynamite Shrimp according to package directions. Thaw Creamy, Spicy Chili Sauce according to package directions.
  5. Top each sweet potato round with guacamole and shrimp, drizzle with Creamy, Spicy Chili Sauce, and garnish with cilantro.

Tips: Substitute sweet potatoes with Yukon Gold or purple potato rounds if desired.

Use medium-size sweet potatoes, about 2 1/2 to 3 inches in diameter.
