Dynamite Shrimp Sweet Potato Bites

- 1 (15-ounce) package SeaPak Dynamite Shrimp (includes Creamy, Spicy Chili Sauce)
- 2 pounds sweet potatoes, sliced into 1/4-inch-thick rounds
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup guacamole
- 2 tablespoons finely chopped fresh cilantro
Directions
- Preheat oven to 425°F.
- In large bowl, toss sweet potatoes with oil, chili powder, cumin, salt and pepper. Arrange in single layer on large parchment paper–lined baking sheet.
- Bake for 15 to 20 minutes or until tender. Let cool completely.
- Meanwhile, cook SeaPak Dynamite Shrimp according to package directions. Thaw Creamy, Spicy Chili Sauce according to package directions.
- Top each sweet potato round with guacamole and shrimp, drizzle with Creamy, Spicy Chili Sauce, and garnish with cilantro.
Tips: Substitute sweet potatoes with Yukon Gold or purple potato rounds if desired.
Use medium-size sweet potatoes, about 2 1/2 to 3 inches in diameter.
