Recipe Description
Ooey-gooey grilled cheese is prepared with popcorn shrimp and finely grated carrot for an easy family meal that’s fun and comforting! This kid-friendly recipe can be built with grown-up variations and even healthier options that will suit your family’s tastes.
Ingredients
- 1/2 (18-ounce) package SeaPak Popcorn Shrimp
- 2 cups shredded mild Cheddar cheese, divided
- 8 slices sourdough bread
- 1 cup finely grated carrots
- 2 tablespoons butter, at room temperature
Directions
- Prepare SeaPak Popcorn Shrimp according to package directions.
- Spread butter on outer sides of bread slices.
- Divide 1 cup Cheddar among 4 inner bread slices. Top with carrot and shrimp according to child’s preferences. Sprinkle with remaining cheese. Cap with remaining bread slices.
- Heat large skillet over medium-high heat. Toast sandwiches for about 3 minutes per side or until bread is toasted and Cheddar has melted. Cut in half to serve.
For Adult-Friendly Builds
- Variation: Incorporate more shrimp per sandwich.
- Additions: Consider adding chopped fresh herbs, lemon juice, Dijon mustard, garlic aioli, chipotle mayo or your favorite hot sauce.
