Holiday Parmesan Shrimp

1 pk 18oz. Seapak® Parmesan Encrusted Butterfly Shrimp

1 pound fresh green beans

½ cup dried cranberries

½ cup sliced almonds

1/4 cup prepared Italian dressing

Shaved parmesan cheese, for garnish


PREHEAT oven to 450°F

Prepare shrimp according to package instructions and keep warm.

While the shrimp is baking, fill a large high-sided sauté pan halfway with salted water and bring to a boil over high heat. Add green beans and cook for 5-7 minutes, or just until cooked through but still with slight crunch.

Drain and strain green beans. Return the green beans to the pan over medium-low heat. Add the Italian dressing and cook for 2 minutes. Stir in the cranberries and almonds.

TO SERVE: Place green beans on a platter (or divide between 4 bowls or plates) with shrimp on top. Garnish with shaved parmesan cheese.
