1 18 oz package SeaPak® Popcorn Shrimp
1/4 cup honey
8 oz kale leaves, stems removed
1 tbsp extra-virgin olive oil
3 cups water
1 tsp salt
1 tbsp butter
1 1/4 cups quick cooking grits
1/4 cup cream
4 oz gorgonzola cheese
Prepare popcorn shrimp per package instructions.
Kale:
Preheat oven to 300°F.
In a large bowl, add kale and drizzle with olive oil. Toss kale with oil until evenly coated.
Spread kale into a single layer onto a parchment or silicone lined baking sheet.
Bake for 22-25 minutes or until crisp.
Grits:
In a small saucepan over medium heat, bring water and salt to a boil.
Whisk in butter and grits and reduce heat to simmer until mixture is creamy and has thickened.
Add cream and cheese and whisk together until melted and completely combined.
Serve:
Divide grits evenly between four serving plates.
Top grits with crispy kale and shrimp. Drizzle each plate with honey and additional gorgonzola cheese, if desired.
Serve immediately.
