These Halloween quesadillas are sure to get everyone into the spirit. You’ll want to toast the jack-o-lantern tortillas first before adding them to the top of the quesadillas instead of flipping them. That way the cheese and fillings won’t escape from the eye and mouth holes.
1 (18-ounce) package SeaPak Popcorn Shrimp
3 tablespoons canola oil
1 (12-ounce) package fajita vegetables
1 tablespoon taco seasoning
8 soft taco-size flour tortillas
1 (8-ounce) block Monterey Jack cheese, shredded
Salsa and sour cream
Preheat the oven to 450°F. Bake the SeaPak Popcorn Shrimp according to package directions, 10 to 12 minutes.
While the shrimp bake, heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the fajita vegetables and taco seasoning and cook 5 minutes or until the vegetables are tender. Remove the vegetables from the skillet to a bowl and wipe the skillet clean.
Using a paring knife, cut a jack-o-lantern face into each of 4 tortillas. Heat 1/2 tablespoon oil in the skillet and brown each of the jack-o-lantern tortillas 1 minute. Set aside.
Sprinkle 1/4 cup cheese onto the remaining 4 tortillas. Top evenly with the fajita vegetables and shrimp. Sprinkle with another 1/4 cup cheese and place the jack-o-lantern tortillas on top.
Heat the remaining oil in the skillet over medium-high heat. Add 1 quesadilla and cook, face-side up, 1 minute or until browned. Repeat with the remaining quesadillas.
Serve with salsa and sour cream.
