Ingredients

  • 1 12 oz package SeaPak® Popcorn Shrimp
  • 2 roma tomatoes, thinly sliced
  • 4-6 leaves lettuce
  • 1 red onion, thinly sliced
  • 6 mini hoagie rolls, sliced in half
  • For the Spicy Aioli:
  • 1/2 cup mayonnaise
  • 1 clove garlic, crushed
  • 1/2 teaspoon lemon juice
  • 2 teaspoons paprika
  • 1 teaspoon dijon mustard
  • 2-3 teaspoons Sriracha sauce (more or less depending on how spicy you like)

Directions

For the Spicy Aioli:

Combine all ingredients and stir well. Refrigerate until ready to spread on po’ boys.

To Prepare Po’Boys:

Bake popcorn shrimp according to package instructions.

Place a tomato slice, red onion slice, and lettuce on each hoagie roll.

Spread with aioli sauce and top with popcorn shrimp (about 6-8 per roll).
