Recipe Description

Instead of tortilla chips, these cheesy nachos are prepared with potato nuggets and SeaPak Popcorn Shrimp. In a word—YUM!

  • 1 (18-ounce) package SeaPak Popcorn Shrimp
  • 1 pound frozen potato nuggets (such as Tater Tots)
  • 1 avocado, peeled, halved and pitted
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 2 tablespoons finely chopped pickled jalapeño peppers
  • 2 tablespoons finely chopped fresh cilantro
  • 1/4 teaspoon salt
  • 2 cups shredded Monterey Jack cheese
  • 1 cup rinsed drained canned black beans
  • 1/3 cup finely diced red onion
  • 1/2 cup pico de gallo
  • 1/2 cup tomatillo salsa

Directions

  1. Prepare SeaPak Popcorn Shrimp and Tater Tots according to package directions.
  2. Decrease oven temperature to 425°F.
  3. In blender, process avocado, sour cream and lime juice until smooth and creamy. Add jalapeños, cilantro and salt. Pulse until combined. Refrigerate avocado crema until ready to serve.
  4. Transfer half the cooked Tater Tots to a parchment paper–lined baking sheet. Layer with 3/4 cup Monterey Jack cheese, half the black beans and half the red onion. Repeat these layers 1 more time. Top with popcorn shrimp and remaining 1/2 cup cheese.
  5. Bake totchos for 10 to 12 minutes or until cheese has melted. Serve with avocado crema, pico de gallo and tomatillo salsa.

Tip: For loaded totchos, add also olive slices (any color), cooked corn, crumbled cooked bacon and thinly sliced fresh jalapeño pepper.
