Take-out fried rice, but faster and loaded with sweet shrimp….
1 (18-ounce) package SeaPak Popcorn Shrimp
4 packed cups leftover cooked rice, preferably cold
4 tablespoons sesame oil
4 tablespoons soy sauce, plus more for serving
1 teaspoon minced fresh ginger
1 ¼ cups frozen mixed vegetables
4 scallions, chopped (optional)
Preheat oven to 450ºF. Prepare a large baking sheet with nonstick cooking spray.
In a large bowl, add the rice, sesame oil, soy sauce, and fresh ginger. Toss to coat.
Fold in the peas and carrots. Pour mixture onto one-half of the baking sheet. Place SeaPak Popcorn Shrimp on the other half.
Bake for 6 minutes and remove from oven to give the rice a stir. Return to oven and bake for an additional 9 minutes.
To serve, scoop rice into each bowl and top with popcorn shrimp. Garnish with scallions (optional). Serve with soy sauce on the side.
