Shrimp and Avocado Toast

Ingredients

1 12oz package of SeaPak Popcorn Shrimp

4 slices multigrain sandwich bread; cut in half

2 ripe avocados

1 radish, thinly sliced (optional)

Salt and pepper to garnish

Directions

PREHEAT oven to 450°F.

Prepare shrimp according to package instructions and keep warm.

Peel and pit avocados. Place avocados in a small mixing bowl and smash with the back of a fork until chunky. Thinly slice radish and set aside.

To SERVE: Spread a layer of avocado mash on each piece of toast and top with Popcorn Shrimp. If desired, top off with thin slices of radish, salt and pepper.
