Shrimp Spring Rolls with Spicy Peanut Dipping Sauce




Ingredients
- 8 SeaPak Shrimp Spring Rolls
- 1/2 cup creamy peanut butter
- 2 tbsp Thai red curry paste
- 1 tbsp apple cider vinegar
Directions
Prepare spring rolls according to package directions and keep warm while preparing dipping sauce.
To a blender, add the remaining ingredients along with ½ cup warm water and blend until smooth.
If mixture is too thick, add more warm water a tablespoon at a time.
Serve alongside warm spring rolls.
