Spicy Diablo Mac ‘N’ Cheese

This ooey-gooey mac and cheese with smoky bacon and pepper jack cheese is served topped with SeaPak Dynamite Shrimp for a decadent dish that’s rich, creamy and with a sassy spicy twist.

- 1 (15-ounce) package SeaPak Dynamite Shrimp (includes Creamy, Spicy Chili Sauce)
- 12 ounces rotini
- 6 slices smoky bacon, chopped
- 2 tablespoons garlic butter
- 1/2 cup thinly sliced green onions, divided
- 1/2 teaspoon chili flakes
- 1 tablespoon all-purpose flour
- 1 cup heavy or whipping (35%) cream
- 1 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups pepper jack cheese
- 1/2 cup grated Parmesan cheese, divided
Directions
- Preheat oven to 425˚F.
- Cook rotini according to package directions. Reserve 1/4 cup pasta cooking water; drain rotini.
- Meanwhile, in large skillet set over medium heat, cook bacon on medium heat for 5 to 8 minutes or until fat renders and bacon is crispy. Drain on paper towel. Reserve 2 teaspoons bacon fat in skillet; discard any excess.
- Add garlic butter to the large skillet and set over medium heat. When melted, add ¼ cup green onions and chili flakes. Cook for 2 to 3 minutes or until green onions are softened. Sprinkle in flour. Cook, stirring, for 2 to 3 minutes or until smooth.
- Whisking, slowly add cream, then milk, and bring to a boil. Reduce heat to medium-low. Cook, stirring frequently, for 5 to 8 minutes or until thickened. Season with salt and pepper. Reduce heat to low. Add pepper jack, 1/4 cup Parmesan, and half the cooked bacon. Stir until cheeses are melted.
- Stir in rotini and reserved pasta cooking water. Scrape mixture into greased 11 x 7-inch baking dish. Sprinkle with remaining Parmesan. Top with remaining bacon and frozen SeaPak Dynamite Shrimp, arranging evenly.
- Bake for 12 to 15 minutes or until golden brown and bubbly. Let rest for 10 minutes before serving. Meanwhile, thaw Creamy, Spicy Chili Sauce according to package directions.
- Drizzle chili sauce over top and garnish with remaining green onions.
Tip: Substitute pepper jack cheese with your favorite cheddar if preferred.
