1 12 oz package SeaPak Shrimp Scampi
8 oz angel hair pasta
1/2 cup diced onion
1 tsp minced garlic
1/2 cup chicken broth
1 cup heavy cream
1 cup shredded Parmesan cheese
1 15 oz can petite, diced tomatoes, drained
1 pinch red pepper
Parsley, for garnish
Cook pasta until al dente. Drain and set aside.
Sauté the shrimp in a skillet according to the package directions while the noodles are cooking. Scoop out the cooked shrimp and set aside in a covered bowl.
Sauté the onions in the remaining butter for 2 minutes. Add the garlic and broth and stir for 30 seconds.
Add the heavy cream and cheese and stir until melted and thick. Season the sauce with the red pepper to taste.
Toss the noodles with the cheese sauce. Gently stir in the tomatoes and shrimp. Garnish with parsley and serve immediately.
