Beer Battered, Soul Food and Comfort Food, Appetizers, Entertaining
1 pkg (11 oz) Beer Battered Crab Poppers
1 tbsp olive oil or vegetable oil
1 onion, chopped
1 clove garlic, minced
1 1/2 cups crushed tomatoes
1 cup chicken broth
1 tsp dried basil
3/4 tsp salt
1/2 tsp pepper
1/4 tsp red chili flakes
1/2 cup whipping cream
1/2 cup shredded Cheddar cheese
2 tbsp chopped fresh chives
Cook Beer Battered Crab Poppers according to package directions.
Heat oil in large saucepan set over medium heat; cook onion and garlic for 3 to 5 minutes or until softened.
Add tomatoes, broth, basil, salt, pepper, and chili flakes to pan and bring to boil.
Reduce heat and simmer for 10 to 12 minutes or until flavorful.
Use a blender to purée soup until smooth. Stir in cream and cook over low heat (do not boil) for about 3 minutes or until heated through.
Preheat broiler. Sprinkle cheese over crab bites; broil for about 2 minutes or until cheese is melted.
SERVE: Divide soup among twelve 2-oz shooter glasses; top with crab bites. Sprinkle with chives.
Tip: You can substitute prepared tomato soup if desired.
