This Shrimp Scampi Bruschetta recipe makes a sophisticated appetizer for any social gathering or dinner party. 1 12-oz. package SeaPak Shrimp Scampi, frozen
1 French baguette, cut into 1/2” slices
2 Roma tomatoes, seeded and diced
2 basil leaves, stemmed and finely chopped
Preheat the oven to 425°F.
Cook the Shrimp
Sauté the Shrimp Scampi according to package directions. Once shrimp are fully cooked, remove the pan from heat.
Toast the Baguettes
Brush remaining scampi sauce on tops of French baguette slices. Place baguette slices on a baking pan in the oven and bake at 425°F for 8 to 10 minutes.
Remove toasted baguette slices from the oven.
Assemble and Serve
Place diced tomato and basil on each bread slice. Top with 2 to 3 shrimp per slice of bread.
Drizzle remaining scampi sauce over shrimp and bread according to taste.
