Our Shrimp Scampi Bruschetta  is just as tasty and just as easy. It starts with a box of frozen Shrimp Scampi prepared in a luscious garlic butter sauce. The scampi sauce flavors the bread, and tender, juicy shrimp are added to the diced tomato topping for a delectable bite.

This Shrimp Scampi Bruschetta recipe makes a sophisticated appetizer for any social gathering or dinner party.  This recipe also makes a nice light summer dinner when served with a simple green salad–just pile up a few or use a larger slice of baguette. This is a versatile recipe you’ll find yourself craving.



Ingredients

1 12-oz. package SeaPak Shrimp Scampi, frozen

1 French baguette, cut into 1/2” slices

2 Roma tomatoes, seeded and diced

2 basil leaves, stemmed and finely chopped

Directions

Preheat the oven to 425°F.

Cook the Shrimp

Sauté the Shrimp Scampi according to package directions. Once shrimp are fully cooked, remove the pan from heat.

Toast the Baguettes

Brush remaining scampi sauce on tops of French baguette slices. Place baguette slices on a baking pan in the oven and bake at 425°F for 8 to 10 minutes.

Remove toasted baguette slices from the oven.

Assemble and Serve

Place diced tomato and basil on each bread slice. Top with 2 to 3 shrimp per slice of bread.

Drizzle remaining scampi sauce over shrimp and bread according to taste.
